I met George at a ROC Growth event and was immediately taken by his passion for mushrooms as medicine. I haven’t had a lot of experience with that and I imagine most in America haven’t either. He did dive into a fair amount of technical information before we talked about mushrooms as a culinary ingredient.

The uses for mushrooms in cooking are almost endless and if you’re a vegetarian you can’t ignore them. With a little bit of attention to detail, oyster mushrooms like George is growing turn into the perfect alternative to using meat in a main course. It’s not a substitute per se but something that can be enjoyed on its own merits.
